  • 3 pounds beef chuck roast, cut into 2-inch chunks
  • 1 bottle Cholula® Birria Cooking Sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 tablespoon Cholula® Chili Lime Hot Sauce, plus additional for garnish
  • 3 cups chopped Romaine lettuce
  • 1 can (15 ounces) corn, drained and rinsed
  • 1 1/2 cups hot cooked white rice
  • 1 1/2 cups chopped tomatoes
  • Crumbled Cotija cheese, for garnish
  • Cholula® Chiles & Pepitas Chili Crisp Sauce, for garnish

INSTRUCTIONS

  • 1 Prepare beef birria in Instant Pot® as directed on Birria Cooking Sauce package.
  • 2 Mix black beans with Chili Lime Hot Sauce in medium bowl, set aside.
  • 3 To assemble bowls, divide lettuce into 6 serving bowls. Top with beef birria, black beans, corn, rice and tomatoes. Top with crumbled Cotija, Chili Crisp and additional hot sauce, if desired.
