Better for You Breakfast Tacos

Feel good about fueling up with “better for you” breakfast tacos. These babies are loaded with fluffy scrambled eggs and topped with a spicy Cholula® Green Pepper Hot Sauce yogurt sauce for a spicy-cool finish.

INGREDIENTS

  • 2 eggs
  • 1/3 cup (75 milliliters) skim milk
  • 1/2 cup (125 milliliters) finely chopped tomato
  • 1/2 cup (125 milliliters) finely chopped cucumber
  • 1 cup (250 milliliters) shredded lettuce
  • 4 (6-inch) flour or corn tortillas, warmed
  • Spicy Yogurt
  • 1 cup (250 milliliters) low-fat yogurt
  • 1 tablespoon (15 milliliters) fresh lemon juice
  • 3 tablespoons (45 milliliters) Cholula® Green Pepper Hot Sauce
  • 2 tablespoons (30 milliliters) finey chopped fresh cilantro

INSTRUCTIONS

  • 1 Mix all ingredients for Spicy Yogurt Sauce in small bowl. Set aside.
  • 2 Heat 1 tablespoon (15 mL) oil in medium skillet on medium heat. Whisk eggs and milk in small bowl until well belnded. Add to skillet, stirring and scraping bottom until eggs are scrambled and set. Remove from skillet.
  • 3 Fill tortillas with eggs and top with tomatoes, cucumbers and lettuce. Drizzle with Spicy Yogurt Sauce to serve.
