- 1/2 pound ground beef
- 1/2 pound ground pork
- 1/2 cup cooked white rice
- 1 large egg
- 1 jar (12 ounces) Cholula® Smoky Chipotle Recipe Mix
- 2 tablespoons finely chopped fresh cilantro
- 2 teaspoons fresh garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon McCormick® Pure Ground Black Pepper
- 2 tablespoons vegetable oil
- 2 1/2 cups low-sodium chicken stock
- 2 tablespoons Cholula® Chipotle Hot Sauce
- 1 tablespoon sugar
INSTRUCTIONS
- 1 Mix beef, pork, rice, egg, 2 tablespoons of the Salsa, cilantro, garlic, salt and pepper in medium bowl just until combined. Cover and refrigerate 15 minutes.
- 2 Portion meat mixture using a small scoop to form about 1 1/2-inch balls. Heat oil in large saucepot or Dutch oven on medium heat. Working in batches, brown meatballs on all sides. Remove from pot and set aside.
- 3 Drain fat, leaving about 1 tablespoon in saucepot. Add remaining Salsa and chicken stock, stirring to mix well. Bring to simmer and return meatballs to pot, stirring gently to cover with salsa mixture. Cover and cook 10 minutes.
- 4 Stir in Hot Sauce and sugar. Cook uncovered 10 – 15 minutes longer or until sauce has thickened slightly and meatballs are cooked through. Serve meatballs and sauce with hot cooked rice and sprinkle with additional chopped fresh cilantro, if desired.
