INGREDIENTS

  • 1 tbps olive oil
  • 1 pound ground chicken or turkey
  • 6 eggs
  • 6 tortilla wraps
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 cup salsa
  • 3/4 cup shredded Monterey Jack cheese
  • 1/3 cup Cholula Original Hot Sauce
  • Diced deli ham
  • Chopped green onion (garnish)

INSTRUCTIONS

  • 1 Preheat oven to 175°C. Heat olive oil in large skillet on medium heat. Add onion and peppers; cook and stir 2 to 3 minutes until or until softened. Add ground chicken, garlic powder and cumin; cook and stir until browned and cooked through. Stir in Cholula Hot Sauce; reduce heat and simmer 5 minutes.
  • 2 Fold tortilla slices and press into 6 muffin pan cups. Divide cooked chicken mixture between muffin cups, adding 1 tablespoon of the ham and salsa to each. Crack 1 egg overtop of filling in each muffin cup and sprinkle with cheese.
  • 3 Bake 22 to 25 minutes or until yolks are set. Sprinkle with green onion and drizzle with additional Original Hot Sauce to serve.
