Inspired by the popular corn on the cob sold by street vendors in Mexico, this salad version of elotes is drizzled with a creamy Cholula® Green Pepper Hot Sauce dressing that’s every bit hot and saucy as it is creamy and cool. Top with traditional Mexican street corn garnishes like chopped cilantro and Cotija cheese.

1Heat olive oil in large skillet on medium-high heat. Add corn; cook until lightly charred, stirring occasionally, about 10 minutes. Set aside to cool.
2Mix mayonnaise, lime juice, chili powder, Green Pepper Hot Sauce and cilantro until well blended and smooth.
3Mix corn, onion, and avocado in serving bowl. Drizzle dressing over top. Stir gently to mix. Top with Cotija, additonal cilantro and sprinkle with additional chili powder.
