INGREDIENTS

  • 1 tbsp olive oil
  • 1/2 cup chopped red onion
  • 1/2 cup chopped red capsicum
  • 1/2 cup chopped yellow capsicum
  • 500 g chicken mince or turkey mince
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/3 cup Cholula® Original Hot Sauce
  • 16 slices (300 g) Deli ham
  • 1/2 cup keto-friendly pre prepared salsa
  • 8 eggs
  • 3/4 cup shredded Havarti cheese (Jack cheese substitute)
  • Chopped green onion (garnish)

INSTRUCTIONS

  • 1 Preheat oven to 175°C. Heat olive oil in a large frying pan on medium heat. Add onion and capsicum; cook and stir 2 to 3 minutes or until softened. Add minced meat, garlic powder and cumin; cook and stir until browned and cooked through. Stir in Original Hot Sauce for 5 minutes.
  • 2 Take an 8-hole muffin pan (⅓ cup capacity) and spray with non-stick cooking spray.
  • 3 Fold ham slices and press into bottom of the muffin pan, overlapping edges to hold filling. Divide minced meat mixture between muffin cups. Top with 1 tablespoon each of the salsa.
  • 4 Crack 1 egg at a time into a separate small bowl. Then pour egg overtop of filling in each muffin cup. Sprinkle each with shredded cheese.
  • 5 Bake 22 to 25 minutes or until yolks are set. Sprinkle with spring onion and drizzle with additional Original Hot Sauce to serve.
    Tip: Can substitute Havarti for different cheeses
