Poppin' Fingerlickin' Potatoes

WHAT'S NEEDED
HOW TO MAKE
  • 1/2 pound fingerling potatoes
  • 1 full pot water (about 1 inch over potatoes)
  • 1 tablespoon of salt
  • 1 tablespoon of olive oil
  • Sea salt and black pepper, to taste
  • 1/2 tablespoon of butter
  • 1/2 onion, roughly chopped
  • 2 cloves garlic, minced
  • 1 cup whole milk
  • 1/2 cup white cheddar (shredded)
  • 1 oz Cholula Original Hot Sauce
  • 1/2 oz garlic chives

    Wash potatoes and slice in half lengthwise. Blanch potatoes in salted water then set on a cooling rack to dry.

    When dry, toss in oil and season with sea salt and black pepper. Roast at 400 degrees until golden brown.

    Sauté onions and garlic in butter on medium heat for 3 minutes (do not let them brown). Add milk and bring up to a simmer. Add cheddar cheese and use a hand blender to combine all ingredients.

    Season with salt and pepper and top off by adding Cholula Original.

    Plate potatoes, smoother with Cholula cheese sauce and garnish with garlic chives.
