Healthy Breakfast Tacos with Spicy Yogurt

WHAT'S NEEDED
HOW TO MAKE
  • 2 eggs
  • 1/3 of a cup of 1% skim milk
  • 1/2 cup of diced tomato
  • 1/2 cup of diced cucumber
  • 1 cup of shredded lettuce
  • 4 flour or corn tortillas (size: 6 inches)

  • Spicy Yogurt
  • 1 cup of low fat yogurt
  • 1 tbsp. of lemon juice
  • 3 tbsp. of Cholula® Green Pepper Hot Sauce
  • 2 tbsp. of finely chopped coriander

    Start by warming your tortillas in the oven.

    Then heat a small frying pan to medium heat, with 1 tbsp. of vegetable oil.

    Mix your eggs and milk together in bowl and whisk with a fork until blended.

    Now pour your mix into a medium-hot oiled pan and stir with a flexible spatula until the eggs are cooked. Remove your eggs from the heat and set aside.

    Assemble your tacos by laying the tortilla shells flat on plates.

    Fill the left side of your tortilla with some scrambled eggs and then layer on tomato, cucumber and lettuce as desired.

    Simply fold over the empty side of the tortilla to complete the first part of your healthy breakfast masterpiece!

    In a serving bowl combine your yogurt, lemon juice, Cholula Green Pepper and chopped coriander, give it little whisk magic and serve!

    TIP: Consider adding avocado slices, queso-fresco and thin-sliced red onions for more color and customization.
