Cilantro Potato Salad

WHAT'S NEEDED
HOW TO MAKE
  • 2 1/2 pounds medley potatoes
  • 3 1/2 tablespoons cider vinegar
  • 4 tablespoons Cholula® Green Pepper Hot Sauce
  • 2 limes, juiced
  • 3 cloves garlic
  • 2 cups cilantro, chopped
  • 2 shallots, chopped
  • 2 jalapeños, seeded and chopped

    Combine all ingredients in a food processor, except potatoes, and pulse until dressing is a smooth consistency.

    Cook potatoes until tender (approximately 12-15 minutes). Let cool.

    Quarter potatoes and toss with dressing. Refrigerate at least 1 hour prior to serving.
