Breakfast Tostada

WHAT'S NEEDED
HOW TO MAKE
    Tostada
  • 3 blue corn tortillas, fried
  • 2 eggs
  • Butter for pan

  • Green Chile Sauce
  • 10 tomatillos, medium
  • 1/2 cup red onion, roughly chopped
  • 1 poblano pepper, stemmed, seeded, and roughly chopped
  • 6 garlic cloves
  • 1 jalapeño, stemmed, seeded, and roughly chopped
  • 1 bunch cilantro
  • 1 teaspoon honey
  • 2 tablespoons lime sauce
  • Cholula Green Pepper Hot Sauce to taste

  • Black Bean Relish
  • 1 can black beans, drained and rinsed
  • 1 cup tomatoes, small dice
  • 1/2 cup red onion, small dice
  • 1/2 cup scallions, sliced
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Cholula Chipotle Hot Sauce to taste

  • Jalapeño Crema
  • 1/2 cup red onion, small dice
  • 1 tablespoon butter
  • Crème fraiche
  • Salt to taste
  • Cholula Green Pepper to taste

    Preheat over to 400ºF.

    For Green Chile Sauce, place all ingredients in a roasting pan and toss with canola oil, salt and pepper. Roast for 2 minutes.

    Transfer ingredients for Green Chile Sauce into blender and pulse with cilantro, honey, and Cholula Green Pepper to make as flavorful as you like.

    For Black Bean Relish, combine all ingredients in a bowl and mix together. Season with salt, pepper, and Cholula Chipotle to make as flavorful as you like.

    For Jalapeño Crema, combine all ingredients in a bowl and mix together. Season with salt and Cholula Green Pepper to make as flavorful as you like.

    Cook eggs in butter, any style you choose.

    Assembly by laying down crispy tortilla, topped with Green Chile Sauce. Layer with eggs, Black Bean Relish, and Jalapeño Cream to create a small tower. Garnish with cilantro sprig.
