Preheat oven to 350ºF. Heat canola oil over medium heat; sauté the red onion until translucent.
Sprinkle sugar over apples and cook for one minute leaving the apples slightly crisp. Add breadcrumbs to the mixture and season with salt and pepper. Let mixture cool for approximately 30 minutes. Place mixture in the center of the pork loin, roll the first flap over and continue rolling. Tie with butcher’s twine.
Season the pork with salt and pepper and sear on all sides until golden brown. Place pork on a baking sheet and cook in oven for approximately 45 minutes.
In medium size small sauce pan, bring apple cider and spice up to a boil, reduce to a simmer and reduce liquid to syrup consistency. Strain out spices and whisk in Cholula Chipotle. Brush the glaze onto the pork loin. Remove butcher’s twine and slice.
