Spiced Pork and Pasta



  • 4 ounces pork tenderloin, 1/2-inch diced cubes
  • 3 green onions, chopped
  • 2 corn tortillas, cut into thin strips
  • 4 tablespoons olive oil, more if needed
  • 3 button mushrooms, sliced
  • 1 roma tomato, 1/2-inch diced
  • 2 tablespoons Cholula® Chipotle Hot Sauce (or to desired spiciness)
  • 1/2 cup manufacturing cream
  • 1/2 cup chicken broth
  • 1 garlic clove, thinly sliced
  • 4 - 6 ounces cooked pasta
  • salt and pepper to taste
  • Parmesan cheese, shredded for garnish
  • cilantro sprig for garnish

    In a medium sauté pan, over medium heat, heat olive oil and cook tortillas until crispy, add more oil if needed.

    Season pork with salt and pepper and cook for two minutes. Add mushrooms, garlic, green onions and cook for another two minutes. Add tomato, Cholula Chipotle, cream and chicken broth.

    Add pasta and season with salt and pepper. Serve with shredded parmesan cheese on top and cilantro sprig for garnish.
