Eggs & Chorizo

WHAT'S NEEDED
HOW TO MAKE
  • 3 medium baking potatoes, peeled and diced into 1" cubes
  • 2 tablespoons canola or vegetable oil
  • 2 pinches sea salt
  • 4 oz of crumbled uncooked chorizo
  • 2 eggs, sunny side up
  • 1/3 cup Cholula Chipotle Hot Sauce
  • Cholula Original Hot Sauce (desired amount)
  • Flat leaf parsley for garnish

    In a large pan, heat the oil until shimmering.

    On medium high heat, fry the potatoes in small batches for 5 minutes each, flipping them when they start to brown underneath to achieve an equal amount of crisping throughout. Set aside.

    In a separate pan, cook crumbled chorizo on medium heat until browned on all sides (approximately 3-5 minutes)

    Turn up heat to medium-high and add potatoes and Cholula Chipotle to the pan until evenly coated throughout.

    Fry eggs in a separate pan to desired doneness.
  • 6
    Ladle potatoes & chorizo onto a serving dish. Top with fried egg and garnish with parsley. Top with desired amount of Cholula Original.
