Beer Battered Onion Rings with Chef Brian Katz

Meet Brian Katz, the chef and owner of 10th Ave Burrito in Belmar, New Jersey. Katz, who has drawn culinary influences from his various stops along the road, specializes in "Mexi-Cali" cuisine. A graduate of prestigious Johnson & Wales, Katz has been featured on the Guy Fieri hit show Diners, Drive-Ins and Dives on the Food Network.
2 cups all-purpose flour
1 medium white onion
1/2 bottle of Cholula Original Hot Sauce
1 cup light beer
salt and pepper to taste
3 cups canola oil
3 cups ketchup
1 jalapeno pepper
2-3 second pour of Cholula Chili Lime Hot Sauce
Cut onion into different sized rings between 1/4" to 5/8".
Whisk together all-purpose flour, salt and pepper, a few dashes of Cholula Original and a 1/2 cup of light beer into a pancake-like batter. Add the beer slowly.
Heat the oil to 350°F and carefully place onion rings into hot oil. Work in batches.
Turn onion rings when golden brown and cook other side - about 2 minutes per side.
Drain onion rings on a paper towel-lined plate and lightly season with salt and pepper. Transfer to server plate or basket.
Roast one jalapeno pepper over an open flame until the skin is charred and bubbled - about 1 minute per side. Place jalapeno into a plastic baggie and steam for 15-20 minutes. Remove pepper and peal off skin.
Roughly chop the jalapeno and add to 3 cups of ketchup. Finish with a few dashes of Cholula Chili Lime and mix all together.
